Chef Manabu Oshima says he can feel in his fingertips how each of his wagyu steaks will taste. The chef and his son work behind the counter at Shima, while his wife serves the front of house. Shima’s menu confirms Oshima’s formative years training in Europe – there’s foie gras and there’s French onion soup – while proving with its wagyu steak that it’s not only the care of the farmer that counts. It’s that of the chef as well.
